Ingredients
9 ounces medium shrimp, peeled and deveined
2 cans diced tomatoes
2 sliced green onions
1/2 cup sliced kalamata olives
1 tablespoon red crushed peppers
1 tablespoon dried basil
1 garlic clove, minced
1/2 cup (4 ounces) crumbled feta cheese
Instructions
Heat a large nonstick skillet coated with cooking spray over medium-high heat. Add shrimp; cook 5 minutes, stirring frequently. Stir in tomato and next 5 ingredients (tomato through garlic); cook 4 minutes or until thoroughly heated.
Serve over rice, pasta or gluten-free pasta. The top with crumbled feta cheese.
