I don’t eat pasta very often, maybe once every couple of weeks, so when I do I want it to really count!! I came up with this and it was over the top good!!
Ingredients
2 tsp olive oil
8 ounce sliced mushrooms
2 chicken breasts cooked,cubed
1 tsp dried thyme
1 clove garlic minced
1 cup ricotta cheese
2 Tbsp parmesan cheese grated
1 egg
1 tsp sea salt
Pasta of your choice.
Instructions
Heat oil add fresh mushrooms, cubed chicken, thyme and garlic, saute for 10 minutes, add a little water to avoid burning.
While mushrooms are cooking combine ricotta cheese, parmesan cheese, drained mushroom water, egg yolk, salt, puree until smooth.
Serve mushroom-chicken sauce over top of pasta.
