I adapted this recipe from Tosca Reno’s “The Eat Clean Diet Stripped”.
I don’t particularly care for some of the items in her version so I simply deleted them.
Ingredients
1 teaspoon olive oil
1 teaspoon sea salt
1/2 teaspoon black pepper
2 cloves minced garlic
1/2 teaspoon ground cumin
1/2 teaspoon chili pepper
1/4 teaspoon cayenne pepper
2 cups cooked red quinoa
2 tablespoons lime juice
1/4 cup chopped scallions
1/4 cup chopped fresh cilantro
Directions
Mix all ingredients in a large bowl and mix well.
Serves: 4
