Clean Eating Roasted Vegetables

Ingredients

1 pound Brussel sprouts halved
2 Leeks sliced
1/2 head Cauliflower, cut up into small pieces
1 Zucchini cut in cubes
1 Summer squash cut in cubes
3 cloves Garlic minced
2 tablespoon Olive oil
Salt to taste
Pepper to taste

Instructions

Preheat oven to 400 degrees.

Spray baking dish with olive oil.

Put all cut up vegetable in a bowl that has a lid. Pour olive oil over the vegetables, cover bowl and shake.

Dump vegetables onto baking dish, add Parmesan cheese, salt, and pepper on top and bake for 30 minutes.

Serve immediately.
