This is a very quick and easy meal to throw together. Took all of about 5 minutes to prep and about 15 minutes to cook. It’s going on our favorites list. Try it and tell me what you think.
Ingredients
1 lb chicken breasts, cubed
1 tablespoon of olive oil
1/4 cup whole wheat or gluten-free flour
3-4 cloves garlic, minced
12 oz sliced mushrooms
1/4 cup cooking sherry
1/3 cup fat free chicken broth
salt and fresh pepper to taste
1/4 cup chopped fresh parsley
Instructions
Season chicken with salt and pepper and dredge in flour, lightly coating.
Heat a large skillet add your olive oil and garlic. Once the garlic is lightly browned add chicken and cook on medium heat for about 5 minutes on each side, or until chicken is no longer pink. Then add mushrooms, salt and pepper stirring occasionally until golden, about 5 minutes.
Add cooking sherry, chicken broth, parsley. Cook a few more minutes or until the liquid reduces.
Serve over rice or quinoa.
I made this for dinner tonite and it was delicious! I’ve been sick and certainly didn’t feel like cooking when I got home from work tonite but this was quick, easy, and very very good.
