Clean Eating Wild Rice and Edamame Salad

This is one is so good even a two-year-old LOVED it.

Ingredients

2 cups cooked and cooled wild rice
1 cup frozen shelled edamame (green soybeans), thawed
1 tablespoon dried cranberries
1 carrot, diced
1 tablespoon soy sauce
1 tablespoon rice or white wine vinegar
1 tablespoon lime juice
1 teaspoon toasted sesame oil
1/2 teaspoon wasabi powder
1 teaspoon minced ginger
2 tablespoons olive oil

Instructions

In a large bowl, toss the rice with the edamame. In a small bowl, whisk the soy sauce with vinegar, lime juice, sesame oil, wasabi powder and ginger, then gradually whisk in the olive oil. Toss the salad with the soy dressing.
