There was a restaurant that I used to frequent just to get this tilapia. When it closed down I had to figure out how to make it myself. After a few tries I think I hit it dead on!!
Ingredients
16 ounces tilapia fillets
3 tablespoons lemon juice
2 tablespoons butter
1 teaspoon dried oregano
1 teaspoon dried basil
2 teaspoons chili powder
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
Instructions
In a shallow bowl combine the butter and lemon juice, microwave until melted. It should take about 15 seconds.
Arrange the tilapia in a shallow baking dish sprayed with non-stick cooking spray.
Sprinkle with oregano, basil, chilli powder, cayenne pepper and salt.
Bake at 450 degrees for about 25 minutes, or until fish flakes when pressed.
Yields: 4 Servings
