I have a feeling I’ll be craving this Clean Eating Spicy Shrimp Salad with Citrus Dressing often. I saw a recipe I wanted to try but it called for grapefruit and for medical reasons I can’t have grapefruit. I made this tonight and I’m SO glad I have enough to have some again tomorrow.
Ingredients
Salad
12 ounces mixed greens
1/2 red onion, sliced
2 leaves fresh basil, cut thinly
For the Spicy Shrimp
14 pieces shrimp, peeled and deveined
1/2 tablespoon extra-virgin olive oil
2 cloves garlic, minced
1 tablespoon chili powder
1 teaspoon paprika
1/2 teaspoon cumin
1/4 teaspoon fine sea salt
pinch cayenne powder, omit if you don’t love spicy
For the Citrus Vinaigrette
1/2 cup fresh lemon juice
2 tablespoons extra-virgin olive oil
1 teaspoon dijon mustard
1 teaspoon freshly grated ginger
1 teaspoon honey
pinch fine sea salt
Instructions
Place the lettuce, onion, and basil in a bowl.
Combine shrimp with spices, making sure to coat the shrimp well.
In a skillet heat oil and add garlic and shrimp.
Let the shrimp cook for 8 minutes, tossing often, until shrimps are fully cooked and opaque.
While the shrimp is cooking whisk together dressing ingredients.
Add shrimp to the salad.
Dress with the dressing and serve.
