Clean Eating Spicy Chicken with Asparagus, Rice & Spinach Meal Prep – This was my first official attempt at meal prep and I must say it turned out fabulous. I will be doing this a lot more often, it will certainly take the guesswork out of my weekday lunches!!
Ingredients
Chicken & Asparagus
1 1/2 pounds chicken breast, cut into 1-2 inch pieces
2 1/2 cups brown rice, cooked
1 pound fresh asparagus, stems removed and cut into 2-3 inch spears
2 tablespoons olive oil
1 tablespoon cornstarch + 2 tablespoons water stirred into a slurry
1/4 teaspoon salt/pepper
Sauce
3 tablespoons Braggs liquid amino acid
1/2 tablespoon fish sauce
1 tablespoon honey
2 tablespoons sambal oelek
1/2 tablespoon sriracha
1/2 tablespoon garlic, minced
Spinach
1 pound baby spinach
1 tablespoon olive oil
1 tablespoon garlic, minced
2 tablespoons lemon juice
salt to taste
Instructions
Add all sauce ingredients to a small bowl and mix well.
Heat 2 tablespoons oil in a wok or large saute’ pan over medium-high heat. When hot, add chicken, and season with salt and pepper. Cook for 6-8 minutes or until cooked through and just beginning to brown, stirring occasionally to ensure even cooking.
Add asparagus. Cook for 3-4 minutes stirring frequently, until bright green yet still firm.
Add sauce, and stir until everything is evenly coated in sauce, and sauce begins to bubble.
Add the cornstarch slurry and stir until the sauce has thickened, about 1-2 minutes.
Prepare the spinach by sauteing spinach in olive oil, lemon juice, and salt to taste. Remove from wok just after spinach has wilted.
Portion rice, spinach and stir-fry into 5 separate containers, let cool, cover and refrigerate.
Servings: 5
