Being Italian, I do not believe there is any such thing as “too much garlic” and this dish as a LOT of garlic. My husband loves scallops so I came up with this Clean Eating Scallops recipe.
Ingredients
2 tablespoons butter
2/3 cup chopped onions
3 tablespoons garlic, chopped
1/4 cup fresh lemon juice
1/2 cup red cooking wine
1 pinch salt
1 pinch cayenne pepper
1 1/2 pounds large sea scallops
1/3 cup chopped fresh parsley
Instructions
Heat butter in a skillet over high heat. Add garlic and onions, cook until translucent.
Toss scallops in pan. Cook and stir until fragrant, about 30 seconds.
Stir wine and lemon juice into scallops, bring to a boil, and cook for about 30 seconds.
Stir parsley, salt, black pepper, and cayenne pepper into scallops and cook for 15 minutes.
Serve over whole grain pasta, quinoa, or brown rice.
Servings: 4
