These Clean Eating Roasted Rosemary Potatoes are very easy to make and absolutely delicious. I usually serve these with dijon chicken and asparagus.
Potatoes also contain a variety of phytonutrients that have antioxidant activity. Among these important health-promoting compounds are carotenoids, flavonoids, and caffeic acid, as well as unique tuber storage proteins, such as patatin, which exhibit activity against free radicals.
Ingredients
4 red potatoes — quartered
1 tablespoon olive oil
1 teaspoon garlic salt
1 teaspoon rosemary, dried
Salt and freshly ground pepper, to taste
Instructions
Heat oven to 400 degrees.
Toss the potatoes, olive oil, garlic and rosemary in a large baking dish.
Roast the potatoes for 1 hour or until evenly browned and crisp. Carefully turn the potatoes, rearranging every 20 minutes.
Season with salt and pepper.
Servings: 4
