Clean Eating Quinoa Fried Rice, something much cleaner than traditional fried rice. I had some leftover quinoa and decided to give this recipe a try. I choose to use liquid Braggs as opposed to soy sauce since it has so much less sodium.
Ingredients
3 cups quinoa, cooked
1/2 tablespoon sesame oil
1 large onion, diced
2 cloves garlic, minced
1 teaspoon ginger, minced
1 12 ounce package of frozen peas and carrots
1 tablespoon Braggs
2 large eggs
1 green onions, for garnish
Instructions
In a wok over medium heat, heat oil.
Add onion, garlic, carrot, and peas and cook until tender.
Add Braggs and ginger to the wok.
Move peas and carrots mixture to one side of the wok.
Stir in 2 whisked eggs and stir quickly so that they scramble.
Add cooked quinoa and stir to distribute. Let heat through, 3 minutes.
Top with green onions.
Servings: 4
