This Clean Eating New Delhi Turkey Meatloaf has been one of my favorites for many, many years. A very healthy alternative to your standard beef meatloaf.
Ingredients
1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 teaspoon curry powder
1/2 teaspoon ginger ground
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon coriander, ground
1/4 teaspoon cumin
1/4 teaspoon cayenne
1 pound ground turkey
1 medium egg, beaten
1 tablespoon Dijon mustard
Instructions
Preheat oven to 325 degrees. Lightly coat a 9 x 5-inch loaf pan with a non-stick vegetable spray.
Heat oil and saute olive oil with onions and garlic. Add curry, ginger, salt, pepper, coriander, cumin, cinnamon, and cayenne. Saute for 5 minutes, stirring occasionally.
Combine the turkey, onion mixture, egg, and mustard in a large bowl.
Place this mixture in the loaf pan, press down to make the top flat.
Bake for 1 hour.
Servings: 4
