2 tablespoon olive oil
1 leeks sliced
1 large onion
2 carrots, diced
2 chicken breast, cubed
1 cup peas, frozen
3 cloves garlic, minced
1/2 head Napa cabbage, shredded
2 medium eggs
1/4 cup hoisin sauce (if you are gluten free make sure you use a gluten free sauce or you can make your own. I will be posting recipe for this soon if this is not already linked. Stay tuned or contact me. I have the recipe, just have not posted it yet).
2 teaspoon onion powder
2 teaspoon coriander
2 teaspoon garlic powder
2 teaspoon curry powder
2 teaspoon pepper
1 teaspoon chili powder
1 teaspoon ginger
Instructions
In a small dish combine last 8 ingredients and set aside.
In a wok over medium head sautee leeks, onion, garlic and leeks until soft.
Add chicken and cook until no longer pink.
Add peas and cabbage. Separate the mixture to either side of the wok and cook 2 eggs and fold the mixture into the eggs as they cook.
Add the mixture of the last 8 ingredients and cook until ever thing is mixed well.
Serve over brown rice.
