My friend Art posted a picture of what he was making for dinner one night. Of course, I had to know what was in it. Here’s my version of his Mexican Maize Chili!!
Ingredients
1 pound ground beef
1 can (16 oz) white corn
24 ounce white beans
1 can (16 oz) tomatoes, diced
2 cup chicken broth
1 medium onion, diced
1 tablespoon garlic, minced
1 tablespoon olive oil
2 tablespoon chili powder
1 tablespoon cumin
1 tablespoon oregano, dried
2 tablespoon lime juice
1/2 tablespoon cayenne
Instructions
Heat onions and garlic in olive oil in a skillet. Once onion is translucent add ground beef, brown thoroughly. In a large pot add all ingredients, including the ground beef mixture, and cook on medium heat for about an hour.
Yields: 12 Servings
