Here’s a Clean Eating Mayonnaise recipe. A lot of people that are trying to “eat clean” question the cleanliness of mayonnaise. I, for one, really like mayonnaise and have a few recipes that call for it. This is what I came up with when I am making something that calls for mayonnaise.
Ingredients
1 egg, (room temp)
1 1/2 teaspoon lemon juice
1 teaspoon white vinegar
1/4 teaspoon Dijon mustard
Sea salt, to taste
1/4 cup olive oil
Instructions
Put the ingredients minus the olive oil in a container that will allow space for an immersion blender. Mix well.
Start the immersion blender and start blending those ingredients while slowing adding the olive oil.
Continue blending until firm.
Store in the refrigerator.
Servings: 4
