Back when I used to work in downtown Cincinnati I used to get this lentil salad at a coffee shop up the street from where I worked. When I quit working there I found myself craving this salad. It took me a while but I finally think I perfected a duplicate. This is what I call Clean Eating Lentil Salad.
Lentils are one of the healthiest foods you can eat. They are often referred to as a “superfood”. I try to have some sort of lentil dish on hand at all times whether it be a lentil salad or soup. If you have not tried lentils I highly recommend you start out by trying a recipe packed with flavor like this one.
Ingredients
1 cup lentils, cooked
1/4 large cucumber, diced
1-ounce feta cheese, crumbled
1 stalk celery stalk, diced
2 leaves basil, fresh, chopped
1/2 tablespoon parsley, dried
1 green onion, sliced
1 clove garlic, minced
1/2 tablespoon dijon mustard
1/4 cup red wine vinegar
Instructions
Combine cooked lentils with cucumber, feta, celery, basil, parsley, onion and garlic.
Mix the Dijon mustard and red wine vinegar, mix well and pour over the lentil mixture.
Mix well, refrigerate for about an hour and serve.
Servings: 3
Yield: 11/2 Cups
