I tried this the other night and my husband can’t stop talking about it. This is called Clean Eating Lemon Almond Crusted Tilapia. This is one of the best clean eating seafood dishes I have prepared in a long time. Serves well with spinach and spaghetti squash.
Ingredients
1 pound tilapia filets, (about 3)
Zest of 2 lemons
Olive oil cooking spray
3/4 cup sliced almonds, ground
1 tablespoon extra-virgin olive oil
3 teaspoons chopped fresh dill
Sea salt and fresh cracked black pepper to taste
6 teaspoons Dijon mustard
Instructions
Preheat oven to 400 degrees F. line a baking sheet with foil and spray it lightly with olive oil spray.
In a small bowl mix together chopped almonds, lemon zest, dill, olive oil and a dash of salt and pepper.
Put fish portions on the baking sheet and spoon one teaspoon of mustard onto each piece of fish and spread it out.
Sprinkle the almond topping onto each piece of fish, dividing it evenly. Press the almond topping lightly with your fingertips to press it into the mustard.
Bake the tilapia for about 20 minutes until the fish is opaque in the center.
