Personally I love lentils and am always looking for different ways to prepare them. If you haven’t tried lentils please give them a chance because they are so incredibly healthy. I try to always have 1 lentil dish in the fridge for when I need to grab something quick to eat.
Benefits of Lentils
- Lentils are Low in calories, fat and cholesterol and extremely beneficial for those on diet.
- Lentils are high in protein, iron and many other nutrients.
- It can be cooked quickly and do not need to be soaked in advance.
- Lentils are high in fiber and used to prevent blood sugar from rising following a meal and for eliminating cholesterol levels.
Ingredients
1.5 cup lentils, cooked
1 green onion sliced
1 tablespoon cilantro, chopped
1/2 tablespoon olive oil
1/2 tablespoon honey
1 tablespoon fish sauce
black pepper, to taste
salt, to taste
2 garlic cloves, minced
Instructions
Mix first three ingredients in a bowl and set aside. But the next 5 ingredients in a small blender and blend well. Pour this mixture over the bowl set aside with the lentils, cilantro and green onions.
Yields: 3 Servings
