This was my Grandma Cioffi’s recipe for green beans. She made them for me every time she knew I was coming over.
Ingredients
2 pounds green beans fresh
2 tablespoon olive oil
4 garlic cloves
1 teaspoon sugar or sugar substitute
1 cup water
salt & pepper to taste
Instructions
Cut ends of beans. Put oil in a large fry pan, on low heat. Add chopped garlic and saute’ until tan. DO NOT BURN. Slowly add 1 cup water and sugar (or substitute) to the sauted garlic, stirring frequently. Pour water mixture into a bowl, stir well and set aside. Add green beans to the frying pan and then pour water and sugar mixture over green beans. Try to cover all the beans by slowly pouring over the top of the beans. When water begins to boil, cover pan with lid and turn heat down to medium. Don’t let water get too low, even if you must add a little more. Let beans steam for about 15 minutes. Taste test and add salt & pepper to your liking.
Yields: 6 Servings
