My version of a Clean Eating Greek Scramble. There is much debate as to whether or not egg yolks are healthy, I believe them to be healthy as that is where all the nutrients are. Some researchers refer to eggs as the healthiest food in the world. I wouldn’t go that far but eggs are a very good source of selenium, biotin, vitamin B12, vitamin B2, molybdenum, and iodine. Additionally, they are a good source of vitamin B5, protein, phosphorus, vitamin D and vitamin A.
Ingredients
1 teaspoon olive oil
2 large eggs, lightly beaten
1 tablespoon almond milk
1 cup baby spinach, roughly chopped
1/2 ounce crumbled feta cheese
1/2 teaspoon oregano
pepper, to taste
Tabasco sauce, to taste
Instructions
Heat oil in a non-stick skillet over medium heat.
Combine eggs, milk, spinach, feta cheese, pepper and oregano in a bowl and whisk.
Add mixture to the skillet and scrambled to desired wellness.
Serve topped with Tabasco if so desired.
