Clean Eating Edamame-Radish Salad

A very light, healthy, and refreshing salad. Quick to make and very healthy.

Radishes are known for the ability to add piquancy to a salad, but they are also good for optimum health in that they contain high dietary fiber, very low fat and cholesterol. Consuming three radishes raw provides potassium, folate and vitamin C, calcium, vitamin B6 and riboflavin. In addition, radishes provide manganese, copper and magnesium.

Ingredients

16 ounces frozen shelled edamame (green soybeans)
2 tablespoon red wine vinegar
1 tablespoon olive oil
1/8 teaspoon salt
pepper
6 radishes, sliced thin
1/4 cup cilantro chopped

Instructions
Toss the edamame, vinegar, oil, salt, pepper, radishes, and cilantro together in a large bowl. Serve chilled or at room temperature.
