I absolutely LOVE chicken salad, can’t get enough of it. BUT, the mayonnaise gets in the way so I did a lot of research and this is what I came up with for a batch of delicious, yet clean eating chicken salad!!
Enjoy with crackers as a snack, in a sandwich or on a few lettuce leaves as a meal.
Ingredients
3 cups cooked chicken, cubed (I poached my chicken breasts and they turned out very moist)
1 cup celery, chopped
1/2 large red onion, minces
3 tablespoons dill pickle relish
3/4 cup mayonnaise, (clean eating mayo, whatever your preference for “clean eating”)
1 tablespoon parsely, dried
1 tablespoon garlic, minced
Instructions
Combine ingredients and chill before serving.
Servings: 6
