Clean Eating Chicken, Mushrooms & Olives

My husband game home with his mom’s favorite recipe last week and wanted me to make it.  I just couldn’t get past one of the ingredients being “1 stick of butter”.   That just seemed like a LOT of butter.  Here’s how I modified it to make it healthier!!

Ingredients

1-1/2 lb boneless, skinless chicken breasts, cubed
1 cup cooked brown rice
2 cups chicken broth
1 cup sliced mushrooms
1/2 can black olives
1/2 tsp kosher salt
1/2 tsp fresh black pepper

Instructions

Place all ingredients in a crockpot and cook on high for 4 hours.
