Here’s my version of a Clean Eating Chicken Marsala with a bit more flavor. Normally this is a bit bland to my liking so I tried to do something a little different to give it some more flavor. This turned out very good and I’ve been requested to make it at least once a week now.
Ingredients
1 pound boneless, skinless chicken breast halves
1/4 cup all-purpose flour
salt and pepper, to taste
1 tablespoon dried oregano
1 tablespoons olive oil
1 tablespoons butter
2 tablespoons garlic, minced
8 ounces sliced mushrooms
3/4 cup sun-dried tomatoes
2 cups packed fresh spinach
1 cup Marsala wine
Instructions
Place chicken breasts between two pieces of wax paper, and pound to 1/4 inch thick with a meat mallet.
Mix the flour, salt, pepper, and oregano. Dredge the chicken in the flour mixture
In a skillet, fry chicken in olive oil over medium heat. Cook until done, turning to cook evenly. Set aside, and keep warm.
In the same pan, melt the butter over medium heat; add mushrooms, sun-dried tomatoes, garlic, and Marsala wine. Cook for approximately 10 minutes, stirring occasionally. Mix in spinach, and cook for about 2 minutes.
Serve the above mixture over the chicken and your choice of pasta.
