This Clean Eating Chicken Basil has been one of my favorite recipes since the mid-’90s. It’s very easy to make and can be ready in less than 15 minutes. I typically serve over rice but it can also be served over pasta of your choice. It is very good over egg noodles.
Ingredients
2 teaspoons olive oil
1 small onion, diced
2 clove garlic, minced 2 to 3
3 medium tomato, diced
2 can (12 oz) chicken breast
1/4 cup basil, dried
1/2 tablespoon Tabasco sauce, (or to your desired spice level)
Instructions
Saute’ onion and garlic in olive oil in a frying pan until slightly brown.
Add chicken, tomatoes, Tabasco and then sprinkle the basil on top.
Turn to low, cover and simmer until the tomatoes and the basil are well cooked.
Serve over brown rice.
Servings: 4
Yield: 3 Cups
