My Uncle Wayne really likes to cook too and is always coming up with some great things that I have to try!! He posted this on his blog the other day and it looked YUMMY!! I made it last night. I had it for dinner last night and for lunch today it was THAT good!!

Yields: 4 Servings
Ingredients
1/2 medium head cauliflower
6 oz. cooked pasta, you can use any. I used whole grain angel hair pasta.
2 tbsp. basil pesto
1 oz. grated Parmesan cheese
1 clove garlic minced
3 tbsp. olive oil
1 tbsp. capers
red pepper flakes to taste
sea salt to taste
Instructions
Cook the pasta according to the instructions.
Clean and cut the cauliflower – then pulse in a food processor until it is about the consistency of couscous.
When pasta is done, drain and put in a large bowl.
Add all other ingredients, mix well and serve.
