This is so incredibly easy to throw together and tastes absolutely incredible. I try keep this in our fridge at all times for a very quick “go to” meal.
Ingredients
4 cup Water
2 can (12 oz) Collard greens
1 can Black-eyed peas
1 tablespoon Garlic minced
Black pepper to taste
1 can (14.5 oz) Tomatoes diced
6 Potatoes, red cubed
Instructions
In a large Dutch oven or large saucepan over medium heat, add all ingredients and cook until the potatoes are cooked through. Add water as needed.
I add red pepper flakes because we like it very, very spicy.
Serve with a side cornbread.
