Clean Eating Beef Stew

beefstewA very simple clean eating beef stew.

Ingredients

1/3 cup whole wheat or other gluten-free flour
1 teaspoon salt
1/4 teaspoon freshly ground pepper
1 tablespoon garlic, minced
2 pounds stewing beef, cut into 1-inch cubes
1 tablespoon olive oil
1 tablespoon freshly squeezed lemon juice
1 tablespoon Worcestershire sauce
1 large onion, sliced
2 bay leaves
1/4 teaspoon ground allspice
12 small carrots, peeled and trimmed
8 to 10 small new potatoes, peeled

Instructions

On a piece of wax paper, mix together flour, salt, and pepper. Roll beef cubes in the mixture to coat. Shake off excess. In a medium Dutch oven, add olive oil and add the beef. When very hot, working in batches so as not to crowd the pan, add beef and cook until brown. As each batch is finished set aside.

Return beef to the Dutch oven, and add 4 cups boiling water. Stand back, as it will splatter. Stir, and add lemon juice, Worcestershire sauce, onion, bay leaves, and allspice. Reduce heat, cover, and simmer until meat is tender, 1 1/2 to 2 hours. Add carrots, onions, and potatoes, and cook until vegetables are tender when pierced with the tip of a knife, 30 to 45 minutes more.

Another method for preparing.  Throw everything in a crockpot, 2 cups of the water less and cook on high for 6 hours.

  1. Nice recipe! I’ll be trying it this evening. It misses the mark on “clean-ness” by including white flour so I’ll substitute a more nutritious flour. The directions also say “melt shortening” which happily is not actually on the ingredient list. Otherwise, it looks great. Thanks! This looks like it might be good with less liquid and perhaps subbing apple juice for the water. I like a good, creative basic recipe to play with.

    • You are 100% correct. I am just getting started here and what I am doing are taking recipes and making them clean. I missed that ingredient. I edited the part about the shortening too. I must have added this one while I was tired. Thank you for visiting. I will be working on this site between now and the end of the year and the goal is to add a new recipe everyday. So, stay tuned.
